3 cups mashed potatoes, chilled
2/3 cup cheddar cheese
2 tbsp. scallions, chopped
1 egg, beaten
½ cup and 3 tbsp. flour
Salt, to taste
Sour cream (to top, if desired)
Combine the potatoes, cheese, scallions, egg, and 3 tbsp. of flour. Divide into 12 balls, and press these flat into pancakes. With the rest of the flour in a dish, cover the flattened potatoes in the flour. Heat a layer of vegetable oil in a skillet over medium heat. Fry the pancakes until they are golden brown on both sides, making sure to add in more oil as needed. Let cool on a paper towel to absorb the oil, and sprinkle with salt. Top with scallions and sour cream.
