Super Bowl Sunday eats: Party dip, burgers, cookies and beverages

Food and beverages are always part of watching the Super Bowl. For a fun party have everyone bring a food or beverage item to the party. It will save you time and makes for fun tasting the different foods.

For your food contribution try something a little different. The dip recipe below will seem like an odd combination of flavors, but surprisingly this dip is a burst of wonderful flavors.

Vidalia Onion Dip

Ingredients:

  • 1 c. chopped sweet onion (such as Vidalia, Walla Walla or Oh So Sweet)
  • 1 c. mayonnaise (not Miracle Whip)
  • 1 c. Swiss cheese (shredded)
  • Parmesan cheese
  • Fritoes, toasted baguette bread or pita chips

Directions:

Pre-heat oven to 350 degrees. In a medium sized bowl add the onions and Swiss cheese, then mix in the mayonnaise. When all is mixed together place in an 8×8 glass dish. Sprinkle the Parmesan cheese on top of the mixture.

Bake for 30 minutes or until bubbly around edges and golden brown on top. Serve warm with toasted baguette bread or pita chips.

Beverage Ideas:

Chilled Wine Spritzer:

Chilled 1 cup of white wine and 1 cup of chilled 7up, mix together. Pour into 2 to 3 wine glasses. Add frozen red or green grapes in place of ice in each glass. Enjoy the drink and then eat the grapes.

Amaretto Margaritas:

2 tablespoons confectioners' sugar, 4 cups crushed ice, 2 cups sweet and sour mix, 5

oz. tequila, 5 oz. amaretto (almond flavored), 2 oz. orange liqueur, 4 orange slices and 4 lime slices for garnish.

Slightly moisten rims of 4 – 12 oz. glasses and dip in confectioners sugar to rim the glasses; fill each with crushed ice. Combine the sweet and sour mix, tequila, amaretto and orange liqueur in a pitcher; stir. Pour mixture into the prepared glasses. Garnish each drink with orange and lime slices.
