Super Bowl so-good-you-won't-know-it's-good-for-you recipe: Chopped guacamole

This Sunday is Super Bowl Sunday, and everyone across the Wichita area and beyond will be hankering for some serious munchies as they cheer on players. Healthy choices aren't the norm for Super Bowl fare — but they can be.

Guacamole can be a delicious, nutritious snack, but its calorie count can vary, depending on what's added. Avocados are chock full of oleic acid, a monounsaturated fat that has been shown to lower cholesterol, and folate, which is important for heart health. Tomatoes have vitamin C in spades and is a terrific source of lycopene, which is a powerful antioxident and cancer prevention aid. Black beans provide plenty of waist-friendly fiber. And cilantro has been proven to help control blood sugar, cholesterol and free radical production.

Traditional guacamole is a great option, but why not wow other Super Bowl watchers with this chunky version for a change? All ingredients are widely available at local grocery and health food stores.

Chopped Guacamole
1 15-ounce can black beans, rinsed and drained
3 avocados, diced
1 pint grape tomatoes, halved
1/2 cup red or yellow onion, diced
1/2 cup corn kernels
1 jalapeño, seeded and diced
1/4 cup lime juice (fresh or bottled)

2 tablespoons olive oil

1 tablespoon fresh cilantro, chopped
3/4 teaspoon garlic, minced
Salt and black pepper, to taste

Gently toss all ingredients together and serve immediately with baked tortilla chips or wheat pita bread slices to your hungry and very appreciative crowd.
