In addition to it being Super Bowl weekend, it’s also Girl Scout Cookie Season! Make this treat for your Super Bowl party and pay tribute to another Super Bowl party staple, pizza. Girl Scout cookie favorite, Thin Mints serve as the topping on the chocolate chip cookie base. Melted white chocolate is drizzled on the top. Easy and delicious.
Ingredients:
- 9 tablespoons unsalted butter, softened
- ¾ cup packed light brown sugar
- ½ cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 ¼ cups all-purpose flour
- ¾ teaspoon baking soda
- ¼ teaspoon salt
- 1 12-oz. package of semi-sweet chocolate morsels (or dark chocolate/mint baking morsels)
- 10 Thin Mint Girl Scout cookies, cut into quarters
- ¾ cup white chocolate morsels
- ¼ teaspoon peppermint extract (optional)

If you’re in the Bensalem, PA area, here are a few spots that commonly have booths this time of year: ACME Woodhaven on Bristol Road, Applebee’s Bensalem on Street Road, Boscov’s in Neshaminy Mall and Redner’s Warehouse Bensalem on Knights Road.
While semi-sweet morsels alone are just fine for this recipe, using mint baking morsels will give it a little extra peppermint flavor. This combination can be hard to find once Christmas is over; however, you might find them on clearance. The Neshaminy Target in Bensalem, PA had bags of Nestle® Toll House® Dark Chocolate and Mint Morsels in their holiday clearance section as of February 2.
Directions:
Preheat oven to 350 degrees.
Beat butter, brown sugar and granulated sugar in a large bowl until light and fluffy. Add egg and vanilla; beat well. Stir together flour, baking soda and salt in a separate bowl. Gradually blend into the butter mixture. Stir in semi-sweet baking morsels.
Butter two 9-inch cake pans. To make cookie removal even easier, cut out 9-inch circles of parchment paper and line the bottom of the pans. Grease top of parchment paper.
Divide batter evenly between the two cake pans. Press Thin Mint pieces gently into the top of the batter, distributing evenly.
Bake for 15-20 minutes, until golden brown and slightly firm. Cool the pans on wire racks.
Melt the white chocolate morsels in the microwave or by creating a double boiler. If you like, add a bit of peppermint extract. This will give it just a little extra flavor and will also give the chocolate a smoother texture.
Using a spoon, lightly scatter the melted white chocolate over the cookie pizzas. Allow to cool completely and remove from cake pans. Use a pizza cutter to cut into triangles and serve.
If making in advance, store in the refrigerator for freshest results.
