Super Bowl: Last minute recipe ideas

When I think of Super Bowl Sunday, I think of food, friends, great commercials, great half-time show, and getting caught up in the excitement of others. I wanted to share some great finger food recipes that are quick and easy to prepare.

When it comes to hot wings, I suggest making your own, it is so easy, especially if you have a deep fryer. Buy a large bag of unseasoned wings, and cut at the joint. Deep fry in batches at 350 degrees for approximately 8 minutes. The wings will float when they are cooked thoroughly. If you have a deep fryer basket, lightly, shake excess oil from the wings, and if not, soak excess with either paper towels or coffee filters. Pour about ½ cup of hot sauce into a medium sized bowl, my preference for hot sauces is the Cholula brand. Add the cooked wings, shake to coat the wings and then place coated wings into serving pan. You can cook the wings and make an assortment of dipping sauces, like honey mustard or blue cheese, instead of coating in hot sauce.

Blue Cheese Dip

1 8 oz. package of cream cheese, softened

½ tsp. Garlic salt

2 tablespoons lemon juice

½ cup evaporated milk

½ cup (approximately 4 oz.) crumbled blue cheese

Beat cream cheese until fluffy, add garlic salt and lemon juice gradually, then add evaporated milk. Blend well. Fold in crumbled blue cheese.

Here is a great dip recipe that works well with chips and fresh vegetables. It is quick, easy and inexpensive to make.

Cucumber Dip

1 8 oz. package of cream cheese, softened

1 medium cucumber, peeled and quartered

1 tsp. Garlic powder

Put all ingredients into a blender, chop, and chill.

I like to make my own chips, and I use soft flour tortillas. I bake these for approximately 5-7 minutes at 400 degrees. Cut the tortillas into chip sized triangles. Lay the triangles onto cookie sheets. Using a kitchen spray container with olive oil inside, lightly spray the chips; do not coat the chips with olive oil. Then shake your seasoning choice on top of the chips. Bake and enjoy. You can create different seasoning toppings, I like cumin and lemon pepper mix. I add the seasonings into an empty shaker container, and I fill the container approximately ¾ of cumin, and the the rest with lemon pepper. Leave room at the top so you can shake your ingredients to mix together. You can also create seasoning mixes with salt, seasoning salt, garlic salt, paprika, chili powder, or cayenne pepper.

Sweet and Spicy Meatballs

1 package (14 oz.) frozen meatballs, thawed

1 tablespoon of soy sauce

½ cup of chili sauce

½ cup of grape jelly

¼ cup of Dijon mustard

In a skillet, cook meatballs in soy sauce until heated through. Combine the chili sauce, jelly and mustard; pour over the meatballs. Cook and stir until the jelly is melted and the mixture come to a rolling boil. Reduce the heat; cover and simmer for 1-2 minutes.
