Super Bowl kid-friendly recipes: Football Frittatas

This is a super snack for your Super Bowl parties with the kiddos - Football Frittatas. These are yummy, fun and are packed with healthy stuff. I make these in a six-pack of football-shaped mini cake tins for that added ball game fun.

Ingredients:

  • 6 cage free vegetarian fed brown eggs
  • 2 medium size zucchinis shredded
  • 1 cup white Irish cheddar, grated
  • 1 cup traditional cheddar, grated
  • 1/2 cup shredded parmesean
  • 1 cup mushrooms
  • 1 cup diced turkey
  • 1 pat irish butter
  • 2 tablespoons olive oil
  • 1/4 cup half and half
  • seasoned salt to taste
  • garlic salt to taste
  • dash of nutmeg

Optional: 1/2 cup broccoli, 1/2 cup tomatoes, 1/2 cup swiss cheese, 1 tspn herbs d'province

Directions:

1. In large bowl, mix together eggs and half and half. Stir in dash of garlic salt, dash of nutmeg and dash of seasoned salt.

2. In a pan, heat 1 tablespoon of olive oil, add in mushrooms and shredded zucchini. Sprinkle a dash of seasoned salt and pat of butter. Sautee for about about five minutes.

3. Add remaining oil into the six football tins, set aside.

4. Mix zuchhini and mushroom mixture into egg mixture.

5. Mix in cheeses and turkey and other optional ingredients.

6. Pour mixture into the six football tins and bake at 375-385 for about 20-30 minutes, depending on your oven. They are ready when you insert a fork and it comes out clean.

7. Put large plate or platter upside down on top of football tins.

8. Turn over to pop out your football frittatas. Enjoy!
