Super Bowl Breakfast Spinach Sausage Egg Wrap recipe for hungry football fans

The Super Bowl fans at your house are going to be eating a lot of unhealthy food later today Sunday February 5th so start the day off with these healthy Breakfast Spinach Egg wraps. The recipe is below as is a link to the best places in Douglas County to watch the NFL World Championship at 3:00 p.m. in Denver CO.

This recipe has quite a few steps but yields 12 good sized wraps for your effort. Read the entire thing before you begin.

 Breakfast Spinach Egg Wrap Recipe

 Ingredients

1 dozen large eggs

  • 1 cup shredded cheese
  • 1 pound chorizo or breakfast sausage
  • 4 oz Neufchatel cheese
  • 1 tsp canola oil
  • 10 oz fresh spinach chopped
  • 4 oz mushrooms sliced
  • 1/2 red/orange/yellow pepper chopped
  • 1/2 mild onion chopped
  • 1 can diced green chilies
  • 1 package Simply Potatoes Shredded Hash Browns (Southwest or Original)
  • 1Tbsp canola oil
  • 1 package whole grain tortilla wraps

Instructions

  1. Brown and drain the sausage in a cast iron skillet on medium heat.
  2. Prepare the hash browns according to the directions on the package.
  3. Combine hash browns and sausage in skillet and set aside.
  4. Chop onion, peppers and mushrooms, add green chiles and saute on medium heat in 1 tsp Canola oil until tender.
  5. Crack 12 eggs into the pan with the sauteed veggies and stir.
  6. As eggs start to cook add chopped spinach.
  7. Add shredded and cream cheese.
  8. Combine the egg mixture, hash browns and sausage. Cook on low head for a few minutes to allow all the flavors to blend.
  9. Place 3 tablespoons of the mixture in the center of each wrap and secure like you would a burrito or egg roll.

To make them special game day use plates with either the New York Giants or the New England Patriots emblem on them or just get ready early and wear your football jerseys to the breakfast table.
