When the decision was made to marinate veggies in a tasty bourbon sauce and serve with grilled bratwurst, this recipe made our Super Bowl party list.
What You Need:
(Makes: 6 skewers)
1/2 cup of reduced-sodium soy sauce
1/2 cup of bourbon
3 tablespoons of brown sugar
1 teaspoon of seasoned salt
1/4 teaspoon of cayenne pepper
2 cups of whole white or Baby Bella mushrooms
2 medium sweet red peppers, cut into 1 inch pieces
1 medium green pepper, cut into 1 inch pieces
1 medium onion, cut into wedges
1 package (16 ounces) uncooked bratwurst links, cut into 1 inch slices
What to Do:
STEP 1) In a large re-sealable plastic bag, combine the soy sauce, bourbon, brown sugar, salt and pepper. Add the vegetables; seal bag and turn to coat. Refrigerate for at least 1 hour.
STEP 2) Drain and reserve the marinade. On six metal or pre-soaked wooden skewers, alternately thread the vegetables and bratwurst. Brush with reserved marinade. Grill, covered, over medium heat for 15 to 20 minutes or until bratwurst are no longer pink and vegetables are tender, turning and basting frequently with reserved marinade.
