Super Bowl recipes for the football players in your living room need to consist of more than just crackers and cheese! Healthy finger food has its place in the world, but not during a Super Bowl game.

The famous TV Chef Eric Borgia is serving 82,000 folks during the Super Bowl 2014 and his offerings don’t seem to take fat and calories into consideration. What he has concentrated on is taste, according to USA Today on Feb. 1.

Buffalo chicken grilled cheese is a crowd pleaser, even the hardest to please will woof this down. This recipe is a variation of Borgia’s. It's easy, inexpensive and oh, so good. You just put it on a platter and it is just as good at room temperature as it is hot out of the oven. It gives your guests that buffalo chicken that become one with football games and the gooey cheese that is also a favorite for sports viewing.

Buffalo chicken grilled cheese for mini grills:
Chicken thighs 8 ozs.
Frank’s red hot sauce 8 ozs.
Butter
Italian bread sliced
White American cheese ½ lb.
White shredded Cheddar cheese ½ lb.

Put the chicken thighs in casserole dish and pour 8ozs. of Franks red hot sauce and 8ozs. of water over the chicken. Cover and bake in 350 degree pre-heated oven for 1 hour.

When the chicken is done, remove from oven and shred the chicken while it is still warm.

Lightly butter one side of 12 slices of Italian bread. Place six of the slices, butter side down, on cookie sheet. Put the shredded buffalo chicken and one slice of American cheese on top of the bread. Then put the other slices of buttered bread on top to make a sandwich.

Place in preheated 350 degree oven and bake for 6 minutes on each side. Take out and sprinkle the shredded cheese over the top of one side of the sandwich. Put the cookie sheet in oven on Broil and cook until cheese just starts to turn golden brown in spots.

Remove from oven and let sit for two minutes then cut the sandwiches in four pieces and put them on a large platter to serve. These will be gone in minutes.

This is one Super Bowl offering that is easy to make and it will feed a bunch of company without breaking the bank!
