Buffalo chicken grilled cheese for mini grills:
Chicken thighs 8 ozs.
Frank’s red hot sauce 8 ozs.
Italian bread sliced
White American cheese ½ lb.
White shredded Cheddar cheese ½ lb.

Put the chicken thighs in casserole dish and pour 8ozs. of Franks red hot sauce and 8ozs. of water over the chicken. Cover and bake in 350 degree pre-heated oven for 1 hour.

When the chicken is done, remove from oven and shred the chicken while it is still warm.

Lightly butter one side of 12 slices of Italian bread. Place six of the slices, butter side down, on cookie sheet. Put the shredded buffalo chicken and one slice of American cheese on top of the bread. Then put the other slices of buttered bread on top to make a sandwich.

Place in preheated 350 degree oven and bake for 6 minutes on each side. Take out and sprinkle the shredded cheese over the top of one side of the sandwich. Put the cookie sheet in oven on Broil and cook until cheese just starts to turn golden brown in spots.

Remove from oven and let sit for two minutes then cut the sandwiches in four pieces and put them on a large platter to serve. These will be gone in minutes.

This is one Super Bowl offering that is easy to make and it will feed a bunch of company without breaking the bank!
