I was inspired to create this recipe after waking up one morning with the desire to eat something more delicious and satisfying. So I carefully came up with a list of my favorite ingredients and those loved by many other Americans and came up with this delicious and filling dish. You’ll open your eyes to this one.
8 slices wheat bread
1 container Pico de gallo
1 jar salsa
1 package cheddar cheese slices
1 package Jimmy Dean sausage
4 eggs lightly beaten
one-half cup bell peppers
1 green onion finely chopped
Preheat oven to 350 degrees. Lightly coat the bottom of metal or glass pan with cooking spray or olive oil. Place bread slices into the pan. In large skillet lightly coated with one teaspoon of olive oil, add the sausage. Cook until brown. Remove from heat. In a medium size bowl, lightly beat the eggs. Add the Pico de Gallo, sausage, and bell peppers. Stir. Spoon salsa onto each slice of wheat bread and then top with slice of cheddar cheese. Add Pico mixture to each slice of bread. Bake in the oven for 10 minutes or until bread is lightly toasted and cheese has melted.
