Summer is not quite over yet. So, head on to your nearest farmer's market and pick out the season's absolute prime produce for preparing the most luscious salads. The delicious easy-to-make recipe you are about to review will make your efforts worthwhile. When you dive into the salad, your taste buds will be thrilled with the crunch of zesty nuts, the zip of vinaigrette, and the sweetness of fresh garden produce. And if you wish, add some garlicky croutons to the mix to enrich the flavor.
Light and Tangy Waldorf Salad
2 Tbsp. Wine Vinaigrette or NAKANO Seasoned Rice Vinegar Original
Grated zest of 1 orange (Click here for video of making orange zest)
Dash of nutmeg
2 firm peaches or nectarines
1 large stalk celery, sliced
1/3 cup toasted walnuts
Chopped up grilled chicken (1 cup)
Lettuce leaves, Boston or red leaf
In a medium bowl stir together seasoned rice vinegar, orange zest and a generous sprinkle of nutmeg. Core and slice peaches and/or nectarines. Cut into smaller pieces and stir into bowl with dressing. Stir in celery and walnuts. Line salad plates with lettuce, add the chopped chicken, and spoon fruit mixture on top.
Makes 5-6 servings.
