Now that spring is in full gear and warmer weather has come to Kansas, you may be thinking that it's time to have a spring gathering of friends, family and food. Good idea — especially when you have an easy, delicious recipe to share. An avocado and shrimp cocktail is sure to get the party started right.
Avocados are nutrition powerhouses. One avocado is cholesterol-free and has very little sodium. While it is relatively high in monounsaturated fat (the "good" fat), it also is high in dietary fiber (54 percent daily value), vitamin K (53 percent), vitamin C (33 percent), pantothenic acid (23 percent), vitamin B6 (26 percent) and potassium (28 percent).
Shrimp also provides beneficial nutrients. A three-ounce portion offers a low calorie count (84 calories), virtually no saturated fat and high protein (18 grams). For those watching their cholesterol, shrimp should not be consumed more than a few times per week, as it provides 55 percent of the recommended daily value.
While avocados are native to South America, Mexico and the Caribbean and are also grown in California, you can find delicious varieties right here in Wichita. Visit any area grocery store or farmers' market for ripe avocados.
All amounts in this recipe can be adjusted to taste. If you prefer more shrimp or more avocado, adjust portions accordingly. If you prefer a creamier consistency, add more mayonnaise. While this recipe calls for baby shrimp, you can substitute larger shrimp cut into smaller pieces. For added zing, replace salt with Cajun seasoning.
Avocado and shrimp cocktail
(Makes 2 servings)
2 ounces baby shrimp, washed and dried
1 avocado
1 teaspoon lemon juice
1tablespoon light mayonnaise
Salt and pepper
Dill weed, dried or fresh
- Cut the avocado lengthwise and discard the pit.
- Scoop out the avocado flesh into a mixing bowl and mash the avocado lightly.
- Add the baby shrimp, lemon juice, mayonnaise, salt and pepper; mix well.
- Scoop the mixture into the two avocado shells, garnish with dill weed and serve immediately, or chill until ready to serve.
