Summer time cake recipes: Easy aloha cake

The cake recipe below is easy and delicious with the flavors of mandarin orange and pineapple. This is definitely a make ahead cake to enjoy.

If desired, the cake batter can be divided between two round cake pans. Topping can be spread between the layers and on top.

Easy Aloha Cake

Ingredients:

  • 1 yellow butter recipe cake mix
  • 1 stick butter
  • 3 eggs
  • 1 can mandarin oranges

Topping:

  • 1 regular size pkg. instant vanilla pudding
  • 1 medium-size can crushed pineapple (do not drain)
  • 9 oz. container of whipped topping

Directions:

Prepare cake mix as directed on package, except do not add the water. Instead add the juice drained from the can of mandarin oranges. Pour batter into a prepared 9” x 13” cake pan. Bake at 350 degrees until done – about 40-45 minutes. Cool.

In mixing bowl combine instant vanilla pudding with pineapple until thick. Blend in whipped topping until completely blended. Spread topping over cake. Refrigerate 2 to 3 hours before serving.
