One of the great things about the State Fair of Texas is visiting the Creative Arts Pavillion and seeing literally thousands of jars of canned items ranging from okra to pickles to jellies and more. All lovingly created at home by cooks wanting that big blue rosette with ribbons to hang on the kitchen wall. Personally, though, you won't see a blue ribbon in my kitchen for canning and preserving.
So what to do? Make some jams that don't require all that effort. Here's an easy gourmet jam that uses summer strawberries combined with a hint of currant from the drizzle of crème de cassis. And, it keeps for a month in a jar in your refrigerator.
Strawberry Cordial Jam
6 cups chopped strawberries (1.5 lbs.)
1 cup sugar
3 Tbsp. crème de cassis
1 Tbsp. water
1/8 tsp. cinnamon
1/8 tsp. ground cardamom
Combine all ingredients in a medium saucepan over medium-high heat. Bring to a boil and reduce heat. Simmer until jam is reduced to 2 cups. This will take a little over an hour. Stir occasionally.
Cool completely, cover and chill 8 hours. Yield: 16 2 Tbs.servings
