I was shopping for groceries online the other day and they were offering a summer vegetable basket from a local CSA. That struck me as befitting a summer recipe so I bought it not knowing what I was gonna get but that was part of the surprise. Sometimes you have to just go for it. So I did. And the results were yummy.

Ingredients List:

  • 1.5 lbs. Stew beef
  • 3 large Carrots
  • Spinach
  • 1 large radish diced
  • 2 Yellow Summer Squashes diced
  • Onion diced
  • 1 turnip diced
  • 1 rutabaga diced
  • 1 can red beans (for some heartiness)
  • 3 Cups of water
  • Half a peach
  • olive oil
  • salt, to taste
  • pepper
  • 3 garlic heads
  • fresh thyme
  • fresh rosemary
  • 1 tiny habanero pepper diced tiny (WASH YOUR HANDS AFTER HANDLING AND AVOID EYE CONTACT))

After you prep you ingredients by washing and dicing brown the meat with a little olive oil. Stew beef is tough so you gonna want to turn the heat down and brown it for a while. Then after the meat is brown add the vegetables and water. Stir and let simmer for 30-45 minutes. After the allotted time taste the stew and adjust seasonings. I added some white rice to the bottom of my bowl but you don't half to. This really filled me up after a long day and gym workout. Another way to prepare this meal would be to use a crockpot. I had a roommate that started using a crockpot and once he did he never stopped. Imagine coming home to a freshly prepared meal without having to prepare it? Just set it in the morning and forget it. Seems lie a pretty good set up if you have it. And crockpots are fairly inexpensive and won't heat up your apartment on a streamy New York City day so that is an alternative to the method I used.
