Two summer recipes for the crock pot

Summer is here. You don't want to be stuck in the kitchen cooking with the hot stove or oven. Go to the beach or a pool party with the kids and let your crock pot do the cooking for you.

Most think that the crock pot is only for soups, stews and pot roasts in the cold winter months. You'll be surprised how great and handy it is during the hot summer. Just substitute the heavy comfort foods with lighter, seasonal flavors.

Here are a couple summer crock pot recipes to get you out the door enjoying the weather instead of slaving over the stove.

Jamaican Jerk Chicken

  • 2 lbs boneless chicken breast
  • 1 cup onion, diced
  • 1 green bell pepper, diced
  • 8-oz diced pineapple
  • 1/2 cup orange juice
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 1 tbsp ground allspice
  • 1 tbsp dried thyme
  • 1 tbsp garlic powder
  • 1 tbsp sugar
  • 1 tsp ground sage
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • 3/4 tsp cinnamon
  • 3/4 tsp ground nutmeg

Place all the ingredients in the crock pot. Cover; cook on low for 6-8 hours.

French Dip Subs

  • 2 lbs cube steak
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 2 cans beef broth
  • 1 tbsp Worcestershire sauce
  • provolone cheese
  • sub buns

Set the steak on the crock pot followed by the sliced onions and green peppers. Pour in the beef broth and Worcestershire sauce. Cover; cook on low for 6-8 hours.

Once the steak is finished cooking. Preheat over an 350. Remove steak from crock pot and slice into thin strips.

Place the sub buns on a cookie sheet. Place the strips of steak on the buns and top with sliced onions and green peppers from the crock pot. Add a slice of cheese to each sub.

Place the cookie sheet of subs in the oven for 3-5 minutes, or until cheese melts. Serve with the broth from the crock pot.
