It’s hard to believe we’ve just come out of the holiday season with temperatures reaching 90 degrees on some days. It’s like Mother Nature is sending us a belated Christmas gift and sunshine and warm weather is a gift no one would refuse. And there’s no better way to enjoy this bonus gift than lounging poolside with a delicious cocktail and refreshing your tan. So take the shorts and strappy sandals out of storage. Summer is back!

French 74
1 oz. Vodka
1 oz. Orange Juice
0.5 oz. Simple Syrup
Champagne
Lemon Twist

Combine all ingredients (except Champagne) in a cocktail shaker with the ice, shake, strain into a champagne flute, top with Champagne, stir.

Pimm’s Cup
2 oz Pimm’s No. 1
3 oz Sprite, 7Up or ginger ale
1 or 2 Cucumber slices
1 Strawberry, hulled and cut into quarters
Half an orange slice
1 Lemon slice
6 Mint leaves

Add all the ingredients to a highball glass filled with ice and stir to combine. (To mix things up a bit, you can replace the Sprite, 7-Up or ginger ale with Champagne.)

And for those of you who want a delicious no muss no fuss cocktail, Skinny Girls’ line of Mojitos, White Peach Margaritas, White Cranberry Cosmo, Sweet n Tart Grapefruit Margarita or the classic Pina Colada are as simple as opening a bottle and pouring it over ice. Half the calories and all the flavor of your favorite cocktails.
