Summer is a great time for sitting around with friends and family at a great home BBQ. While waiting for the main course having a few simple appetizers will set the mood for a lovely day out. Seafood on the grill takes such little time it is a natural for either the main course or for finger foods. Many types of seafood can be cooked directly on the grill or if you have a grill plate or basket you can use that. Clams may seem to be a difficult choice for the grill but in reality they are a good choice. Using a fairly hot grill is key and removing the clam as soon as they pop. This recipe is taking the ease of steamed clams and combining bacon with a few ingredients make clams casino. This version of clam’s casino is simple but the taste is wonderful. With the use of an outdoor heavy cooking pan you cook up all the ingredients except the clams first. After those ingredients are done, you place your clams with directly on the grill grate or use a grill basket or plate. For an added taste of zest, use a few drops of your favorite hot sauce.

18 medium-sized (about 2 1/2-inches) littleneck clams
2 tablespoons unsalted butter
3 strips, center-cut bacon, diced finely
3 tablespoons finely diced red bell pepper
¼ diced finely onion
3 garlic cloves, finely minced
1/8 teaspoon freshly ground black pepper
A pinch of salt
2 tablespoons parsley

A few lemon wedges

1. Heat grill to medium heat

2. Placed diced bacon in a heavy skillet cook on top of the grill
3. Add butter, peppers, onions and garlic
4. Set aside
5. Now place your clams either on the direct grill grate or in a grill basket
6. As clams “pop” open, remove
7. When all clams are done, top each one with bacon mixture.
8. Serve with lemon wedges and/or cocktail sauce
