"While visions of sugar plums danced in their heads . . ." Remember that line from Twas' the Night Before Christmas? This candy is easy to make and you will wow others with their sweet taste. Sugar plums were my favorite Christmas candy growing up. I made these yesterday to take to a Christmas cookie/candy exchange.
Sugar Plums
- 2 eggs slightly beaten
- 1 c. sugar
- 1/2 c. butter
- 1 1/2 c. dates, chopped
- 1 tsp. vanilla
- 1/2 tsp. salt
- 1/2 c. walnuts, chopped
- 2 1/2 c. Rice Krispie cereal
- powdered sugar or coconut for rolling
In a large sauce pan stir together eggs, sugar, butter, and dates. Cook over medium heat for 7 minutes. Remove from heat and add the vanilla, salt, walnuts, and cereal. Cool to handle. Roll into small balls; roll in coconut or powdered sugar twice. (You can also use a melon baller instead of rolling them into ball by hand.)
