Tired of plan old dressing with your meals? How about whipping up some stuffing parcels? This very nice recipe was sent to me by a friend in London, who patiently translated it from the original into 'American' English. If you are using 'real' bacon, stop out to the 2nd Street Market and purchase it from local farmers who raise their pigs kindly and provide them with a good life before being turned into bacon. Otherwise, Morningstar faux bacon works at least as well or even better.

Stuffing parcels

  • 2 oz butter
  • 1 package of Stovetop-type stuffing (or make your own and God bless you)
  • 24 thin slices of bacon or faux bacon
  • 12 bay leaves (optional)

Butter a muffin tin. Make up the stuffing mix and stir well. Set aside to absorb the water and cool.

Meanwhile, criss-cross two bacon strips in each space in the muffin tin, letting the excess strips overhang the tin. Lay a bay leaf at the intersection of the bacon strips. Spoon the stuffing mixture into the tin and fold the overhanging bacon over the top to make a parcel. Secure in place with a toothpick. Chill until ready to bake.

Bake at 350F for 30 minutes, until piping hot and the bacon is cooked. Remove the toothpicks before serving.
