Stuffed Cherry Bell Peppers (prosciutto and mozzarella)

Our second dish in our appetizer menu are cherry bell peppers stuffed with mozzarella wrapped in prosciutto. This dish requires no cooking, just a little preparation time.

Ingredients

  • 24 cherry bell peppers
  • 12 slices of prosciutto
  • 1 ball of fresh mozzarella
  • Olive oil
  • Fresh pepper

Preparation

  • Cut off the top of the peppers, deseed, rinse and place in salted water for 10 minutes.
  • Rinse and pat dry.
  • Slice the mozzarella in sticks (about ¼ inch thick and 1 inch long).
  • Slice the prosciutto in half lengthwise and roll around the mozzarella sticks.
  • Stuff the cherry bell peppers. An alternative is to cut a ring out of the middle of the pepper and stuff as such.
  • Cover and keep refrigerated until ready to serve.
  • Sprinkle with olive oil and fresh pepper prior to serving.
