Our second dish in our appetizer menu are cherry bell peppers stuffed with mozzarella wrapped in prosciutto. This dish requires no cooking, just a little preparation time.

Ingredients
- 24 cherry bell peppers
- 12 slices of prosciutto
- 1 ball of fresh mozzarella
- Olive oil
- Fresh pepper
Preparation
- Cut off the top of the peppers, deseed, rinse and place in salted water for 10 minutes.
- Rinse and pat dry.
- Slice the mozzarella in sticks (about ¼ inch thick and 1 inch long).
- Slice the prosciutto in half lengthwise and roll around the mozzarella sticks.
- Stuff the cherry bell peppers. An alternative is to cut a ring out of the middle of the pepper and stuff as such.
- Cover and keep refrigerated until ready to serve.
- Sprinkle with olive oil and fresh pepper prior to serving.
Serve as part of an appetizer menu with other items of your choice.
