Strawberry Valentine cookies

Valentine's day is just around the corner. I've been in the mood to bake festive Valentine recipes and I've found lots of great desserts on Pinterest. I've never had strawberry cake mix before, so when I saw this recipe for Strawberry Gooey Butter Cookies, I thought I would give them a try. Any recipe that starts with a boxed cake mix is one that I want to try. I love easy dessert recipes.

Even though this recipe starts with a cake mix, it still takes a little bit of time because you need to refrigerate the dough for an hour. But the end result is well worth the wait. These cookies are very soft and moist. They have a great strawberry flavor and almost remind me of a muffin or scone. The batch makes quite a bit of cookies, so I would recommend sharing them with friends or giving them away for Valentine's Day!

Strawberry Gooey Butter Cookies (recipe by Cookies and Cups)
1 (8 oz) block cream cheese, room temperature
1/2 cup butter, room temperature
1 egg
1 box strawberry cake mix
1/4 cup powdered sugar

Cream together cream cheese and butter until smooth. Add egg and beat until combined.

Slowly add in the cake mix. The dough will be thick.

Refrigerate dough for about an hour. The colder the dough, the puffier the cookies will be.

When dough is chilled, preheat oven to 350º. Line baking sheet with parchment paper.

Place powdered sugar in a small bowl. Roll dough into 1" balls and then roll in powdered sugar. Place cookies about 2" apart on prepared baking sheet and bake for about 10 minutes until centers are just set.

Cool on a wire rack.
