This delectable strawberry pie will be the only strawberry pie recipe you will ever make after you eat it once. The filling coats each juicy berry with just the right amount of sweet and it is incredible – one bite after another and on into your second piece, then your third, then . . . you better make more than one! The beauty of this pie, too, is that it is so easy to make. If you choose to share it with others, they will want the recipe so you better take it with you!
Many strawberry pies keep the berries whole; this looks good for show, but does not make the best-tasting pie. Slicing the berries allows the filling to coat each side of them and makes a much better pie.
Okay, you may not be eating strawberry pie for its health benefits, but these fresh strawberries still give you a plethora of vitamins and nutrients. Strawberries are one of the best sources of Vitamin C – a good reason to eat a lot of pie!
Strawberry Pie Recipe
Ingredients for Strawberry Pie:
- 9-inch single pie crust, baked and cooled
- 1 – 1 ½ quarts fresh strawberries, washed, well-drained, and hulled
- 1 ½ cups cold water
- ¼ cup cornstarch
- 1 ½ cups sugar
- 1 box (3-ounce) strawberry jello
Directions for making Strawberry Pie:
In a medium-sized saucepan, stir together the cornstarch and water. Put the pan over medium-high heat and add the sugar. Stir until the mixture begins to boil. Remove the pan from the heat and add the strawberry jello powder; stir until well-incorporated. Set aside and allow to cool while making the rest of the pie. (Cool only to lukewarm. Don’t allow it to cool completely, otherwise it will thicken too much before being poured over the berries.)
Slice the well-drained berries into the baked pie shell – fill it even with the top edge of the shell – don’t mound it. Pour the filling evenly over the berries. Refrigerate for an hour prior to serving.
