Berry season is just about to start here in Texas. Enjoy this simple strawberry salad featuring berries and sweet onions for a twist.
Strawberry-Bail Salad with Balsamic Vinaigrette
3 Tbsp. evoo
3 Tbsp. balsamic vinegar
1/2 tsp. salt
1/8 tsp. pepper (try white)
8 cups of Romaine lettuce, torn
2 cups sliced strawberries (about 1 lb.)
1/2 cup vertically-sliced Vidalla or 1015 onions
1/4 cup torn fresh basil
Combine evoo, balsamic vinegar, salt and pepper in a large bowl. Stir well with a whisk. Add lettuce, berries, onion, and basil. Toss gently to coat. Serve immediately.
Variation: Make some extra dressing and mix in some cold shredded chicken for a light lunch.
