Have you ever tried your hand at making your own freezer jam? Since it is strawberry season here in North Carolina, I decided to try my hand at this freezer jam. I have to say, I NEVER want to purchase store bought strawberry jam ever again! This jam is incredible! Here is the recipe I came up with to use:
Strawberry Banana Freezer Jam
- 1 pack (Ball) Freezer Jam Fruit Pectin
- 1 ½ cups sugar
- Fresh strawberries and 1 banana to equal 4 cups, smashed
In a large bowl, mix together pectin and sugar. Add smashed fruit. Stir for 3 minutes. Pour into 5 pint sized jam / jelly mason jars with lids.
You can freeze this for 1 year or it will last for several weeks in the refrigerator.
I also tried this same recipe with 4 cups of smashed strawberries and 5 tsp. lemon juice. I called it strawberry / lemon jam!
The freezer jam fruit pectin is a powder that comes in a packet that contains 1.59 ounces of the powdered pectin. It can be found at the grocery store in the baking isle.
Happy canning!
