If you're looking for a tasty vegetable side dish you should give this one a shot. Plenty of flavor and you can toss it together in minutes. When you cook your vegetables for a shorter amount of time you are retaining more of the nutrients, so a stir-fry is a healthy option too. You can add more red pepper flakes if you prefer, or cut back a bit if you don't want that kick. Salt is optional, just use enough to taste.
Stir-Fried Broccoli With Garlic
- 1/2 pound broccoli florets
- 1 red bell pepper, seeded and chopped
- 2 TBS olive oil
- 2 garlic cloves, peeled and chopped finely
- 1/2-1 tsp of red pepper flakes
- 2 TBS water
- 2 tsp lemon juice
- 2 tsp soy sauce
- salt to taste
Heat the oil in a skillet on medium high. Add garlic and red pepper flakes. Add broccoli, salt to taste, stirring briefly. Add the water after broccoli turns bright green and cook for an additional 2-3 minutes. Add the red bell pepper and stir in the soy sauce and lemon juice. Cook and stir for 1-2 more minutes. Serve immediately.
