Stevie Z's BBQ, located at 195 South Main Street in Waynesville, is celebrating the return of spring by re-opening this coming Friday, March 1st for the 2013 season. After a snow-filled winter, seeing Steve behind the counter of his restaurant will be a welcome sight for all of us who have tasted his delicious barbecue and amazing sides.
What makes Stevie Z's food so outstanding? Steve marinades all of his meats in his own special recipes and then smokes it slowly over wood. No propane is involved in his smoking process. That is what truly sets his barbecue apart from the competition. As Steve himself puts it:
If you have to cover your BBQ with a thick sweet sauce – you’re hiding something. We always invite our customers to try our BBQ without any sauce to experience what a proper “bark” should taste like.
The first thing you’ll notice is the mahogany color. This color is the result of paying attention during the cook to make sure we’re not blasting the sugars in the rub and keeping the soot and ash to a minimum.
The next thing you’ll notice is the taste. It’s very distinctive. This is because we blend our rubs to work with apple and beechwood smoke. In addition, we add a special blend of juices at the end of the cooking process to bring all the flavors together.

In addition to hand rubbed and slow smoked meats, Steve also serves up the best cheesy potatoes I have ever had. Add to that succulent green beans, cole slaw and hand dipped Hershey's ice cream, and you can see why so many are anxiously awaiting Stevie Z's re-opening.
