I've discovered over my years of cooking that one of the best inventions for the kitchen ever developed is the slow cooker. Commonly known as the "Crock-Pot", many have discovered what a real lifesaver this small appliance is. Since the early, 1970's, this great invention has made coming home to home-cooked meal a true reality. Now that liners have been developed to aid in clean-up after using a slow cooker, this makes using a slow cooker even better and gives many cooks more of an incentive to use it more often.
If you've gotten out of the habit of using your slow cooker, why not get it back out again and try a good recipe I've come across, which is for "Smothered Steak". This is a recipe developed for use in a slow cooker, and you can choose how long you need to cook it. The ingredients are all combined and can be cooked on low heat for 8-10 hours or on high heat for about 4 hours. Select the time you would like to have dinner ready and plan this dish around the time you choose to cook it!
This uses chuck or round steak, which is cut into strips. The strips are coated with seasoned flour, followed by onions, green pepper, mushrooms, Worcestershire sauce and, if you like them, French-style green beans. This is an optional item, but I like to add them. Then, as the saying goes, "set it and forget it!" You'll have the main course of your meal ready between 4 to 8 hours, according to what temperature setting you use on the cooker.
If you're not using the green beans in this dish, I'd suggest serving the green beans separately or serve another green vegetable. - 1-1/2 lbs. chuck or round steak, cut into strips
- 1/3 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 large onion, sliced
- 1 large green pepper, sliced
- 1 4-ounce can sliced mushrooms, drained
- 1 tablespoon Worcestershire sauce
- 1 10-ounce pkg. frozen French-style green beans, thawed (optional)
Place the steak strips, flour, salt and pepper in the cooker and stir well so that the meat is coated. Add the remaining ingredients in the cooker and cover. Set the cooker on low and cook for 8-10 hours or set on high and cook for about 4 hours. Serve with rice. Yield: 4 servings.
