Mousse au Chocolat
- 6 ounces of chopped up semi-sweet chocolate
- 3 eggs, separated
- 3 tablespoons of unsalted butter
- 1/2 teaspoon of cream of tartar
- 1/4 cup of sugar
- 1/2 cup of whipping cream
- 1/2 teaspoon of GOOD vanilla extract
- additional whipped cream and chocolate shavings for garnish - optional
Combine the chocolate and butter in a double boiler and stir until smooth. For best results, use a wooden spoon. Let the mixture cool, then add the egg yolks, one at a time, whisking after each one. Set this mixture aside.
Beat the egg whites until a foamy consistency. Add the cream of tartar and continue beating until the egg whites begin to form soft peaks. Gradually add the sugar and continue beating until the mixture forms stiff peaks.
Whip the cream and vanilla in an ice cold bowl until it reaches a soft peak consistency.
To assemble, fold the egg whites into the chocolate first. Then fold in the whipped cream. Spoon into 4 of the the most glamorous crystal goblets you can find and chill for several hours before serving. For even more WOW factor, top with a dollop of whipped cream and sprinkle with chocolate shavings. Decadent!
