Before you start guzzling the green beer, running through the streets naked with a shamrock covering the "goodies,"and preparing a boring dinner of corned beef and cabbage -- you have to start St. Patrick's Day and what better way than with Irish Date and Nut Scones!
The great thing about this authentic Irish way to start the day is you can make the dough the day before and once the morning coffee is brewing, you can prepare them. Fresh scones and freshly brewed coffee, what a wonderful day you are going to have!
Ingredients needed to make Irish Date and Nut Scones (makes 8 pieces):
- 2 cups flour
- ¼ cup sugar
- 2 tsp. baking powder
- ½ tsp. salt
- ¼ cup butter, chilled and diced
- 1 egg, beaten
- 1 egg, separated
- 1/3 cup whipping cream
- ¾ cup chopped dates
- 1/3 cup chopped almonds
Steps:
- Pre-heat oven to 400.
- In a medium bowl whisk together the flour, sugar, baking powder and salt. Using a pastry blender or your fingertips cut in the butter until it resembles a coarse meal.
- In a small bowl whisk the egg and egg yolk into the whipping cream until smooth. Stir this into the flour for form a dough. Stir in the dates and almonds.
- Place the dough on a floured surface and knead 10 minutes. Roll the dough out into a 7-inch circle and cut it into 8 wedges.
- Line a baking sheet with parchment paper. Place the wedges onto the prepared baking sheet.
- In a small bowl whisk the egg white just until it begins to foam. Brush the egg white over each wedge.
- Place in oven and bake 20 minutes.
- Remove from the oven and let cool on a rack.
