The most popular food that is served on St. Patrick's Day is Corned Beef and Cabbage. While there is nothing wrong with this delicious traditional meal with Green Beer, why not try a new drink out and whip up a green dessert for after dinner? A Pistachio Cake or Pistachio Mousse would go wonderfully with your Nutty Irishman for dessert. To make a Pistachio Cake, you simply add a box of pistachio pudding mix to a regular box of yellow cake mix. Add 4 eggs, 1 1/2 cups of water, and 1/4 cup of oil. Stir in 5-7 drops of green food coloring, if desired. Preheat oven to 350 degrees. Grease and flour a bundt pan. Bake for approximately 50-55 minutes. You can also add green food coloring to your frosting if desired. This cake is very moist too!
- 1 cup graham cracker crumbs
- 3 TBSP melted butter
- 1 package pistachio pudding mix
- 1 cup of milk
- 1 cup of cool whip.
Mix graham cracker crumbs and butter. Press down into small serving cups, making a crust. Mix together milk and pistachio pudding mix with the Cool Whip. Divide between serving cups. Chill for at least 2 hours. Top with Cool Whip and crushed pistachios before serving.
