On March 19, four event organizers from Good Eats and Meets! Charlotte hosted a post “Everybody’s Irish” St. Patty’s Day dinner and cocktail pairing where guests indulged in a four-course meal featuring both traditional and unique Irish fare and cocktails laced with smooth Irish whiskey. The appetizer course featured a version of Bangers and Mash with chicken and apple smoked sausage alongside renowned Las Vegas Chef Joel Robuchon’s Ultimate Creamy Mashed Potatoes. To compliment the flavors of the sausage, this course was paired with a "Green Dublin Apple Martini" featuring smooth Irish whiskey, sour apple Schnapps and white cranberry/strawberry/peach juice combination.
An Irish Goat Cheese and Wild Mushroom Terrine with pomegranate poached pear slices, mixed baby greens with mint vinaigrette dressing and rye toast points showcased a lovely colored Irish Rose cocktail made with pomegranate syrup, lime, Irish Whiskey and a splash of Ginger Ale.
For the main course, guests were offered their choice of traditional Irish beers ~ Guinness or George Killian’s Irish Red with tender sliced Corned Beef Brisket with mustard sauce, sautéed fennel, baby zucchini, baby carrots and lightly toasted Rye Pumpernickel bread.
A decadent Irish Mudslide cupcake topped with rich, sweet Bailey’s Irish Cream and Kahlua buttercream frosting accompanied the Celtic Berry Patch cocktail featuring a fruity combination of Chambord, Raspberry Vodka, Celtic Irish liqueur, and half and half.
Afterwards, guests sipped on Irish coffee while they contemplated what they'd do if they found the pot o' gold under the rainbow. It was a magically delicious top o' the evening!
Green Dublin Apple Martini
Ingredients:
1-1/2 oz Irish whiskey
1 oz Sour Apple Schnapps
2 oz white cranberry juice (we used Ocean Spray White Cranberry-Strawberry-Peach)
1 drop green food color
Preparation:
- Add all three ingredients in a cocktail shaker.
- Add ice, shake vigorously for 30 seconds.
- Strain into a chilled martini glass.
- Garnish with a fresh apple slice.
Irish Rose
Ingredients:
1 oz of lime juice
1 oz of pomegranate syrup
6 oz of ginger ale
1 oz of Irish whiskey
Directions:
Mix all of the ingredients together and pour the drink over ice. Garnish with a lime wedge.
CELTIC BERRY PATCH
Ingredients:
3 oz Half & Half
1 oz Chambord
1 oz Celtic Crossing Irish liqueur
1 oz raspberry vodka
Directions:
Mix all of the ingredients together and pour the drink over ice. Garnish with fresh raspberries.
Irish Coffee
Ingredients:
3 oz Irish whiskey
2 tsp sugar
12 oz strong coffee
Whipped cream for garnish
Directions:
- Heat a goblet glass in boiling water. Dry the glass and pour in the whiskey and sugar.
- Pour in the hot coffee and stir the drink to dissolve the sugar.
- Top the coffee mixture with a generous dollop of whipped cream and serve.
