St Patrick's Day cookbook: Corned beef hash omelet recipe

I got the idea for this from Allrecipes. It made a fantastic and filling lunch.

Find everything you need, including a great deal on the corned beef brisket, shop at your local Meijer.

  • 3 eggs
  • 1 t milk or half and half
  • black pepper to taste
  • 1/2 cup corned beef hash
  • 1 thin slice Velveeta cheese
  1. In a small bowl, beat eggs, milk and pepper. Cook in a medium frying pan sprayed with cooking spray. Invert onto and plate and turn over when eggs are set on one side.
  2. Top omelet with corned beef and cheese. Fold in half and remove from heat til cheese is melted.
