Every Irish family has its own version of this classic dish. My recipe comes from a friend’s family in Ireland. It’s part of their St. Patrick’s Day dinner, along with lamb chops, carrots and soda bread.
What You Need:
(Makes: 12-16 servings)
2 pounds of cabbage, shredded
2 cups of water
4 pounds of potatoes, peeled and quartered
2 cups of milk
1 cup of chopped green onions
Salt and coarsely ground pepper to taste
1/4 cup of butter, melted
Cooked bacon, crumbled
Fresh parsley, minced
What to Do:
STEP 1) In a large saucepan, bring the cabbage and water to a boil. Reduce heat; cover and simmer for 10 to 12 minutes or until tender. Drain cabbage, reserving cooking liquid. Keep cabbage warm.
STEP 2) Place the cooking liquid and potatoes in a large saucepan; add enough additional water to cover the potatoes. Bring to a boil. Reduce heat; cover and cook for 15 to 17 minutes or until tender. Drain and keep warm.
STEP 3) In a small saucepan, bring milk and onions to a boil; remove from the heat. In a large bowl, mash potatoes. Add milk mixture; beat until blended. Beat in the cabbage, salt and pepper. Drizzle with the melted butter, bacon and parsley.
