Holiday's with a theme are always fun. St. Patrick's Day involves wearing, eating, and drinking a lot of green colored foods. It also involves a lot of Irish meals. Here are two recipes for a gluten-free, green and Irish breakfast.
Corned beef hash:
Traditional Irish breakfast dish. This gluten-free recipe is filling, delicious and a great start to St. Patrick's Day.
3 tablespoons unsalted butter
1 cup red bell pepper, finely chopped
2 cloves garlic, minced
3 cups cooked corned beef, finely chopped
3 cups chopped, cooked potatoes
1 medium onion, finely chopped
1/2 tsp fresh thyme, chopped
1/2 tsp chopped fresh oregano, chopped
1/4 tsp ground pepper
Melt the butter in a large skillet over medium heat. Add the bell pepper and onion and cook until they begin to brown, approximately 5 to 6 minutes. Add the garlic, corned beef, potatoes, thyme, oregano and black pepper to the skillet, stir a few times. Spread the hash evenly over the pan and firmly press down with a spatula. Cook until browned, approximately 8-12 minutes. After it's browned, stir the hash mixture. Press it down with the spatula, and cook for another 5 minutes. Serve.
Hard boiled eggs with avocado:
This recipe, although not Irish, is green and fun for parties and for kids. It's gluten-free and doesn't involve food coloring.
6 hard boiled eggs, cooled
2 ripe avocados
1/4 cup diced onions
1/4 cup tomatoes
1 Tbs freshly chopped cilantro
Mix avocados with onions, tomatoes, and cilantro until avocados are smooth. Remove shells from hard boiled eggs and cut in half length wise. From top to bottom, cut carefully to avoid tearing the egg white. Remove yolk. (You can use the yolks for other recipes or throw them away, you can also stir them into the avocado mixture). Scoop the avocado mixture into the hole where the yolk was. Serve immediately.
