St. Paddy's Day Leprechaun's Lucky Crunch Delight recipe

St. Patrick’s Day celebrations call for festive foods, often tinted with bright green. Try this crowd-pleasing crunchy side dish, which offers a wonderful mix of fruit salad and dessert. Watch your favorite Leprechauns, both young and old, devour it with enthusiasm.

First, gather your St. Paddy's Day Leprechaun's Lucky Crunch Delight ingredients:

  • 1 cup pretzels (crushed)
  • 1 stick butter (melted)
  • 8 ounces cream cheese (softened at room temperature)
  • 1/2 cup granulated sugar
  • 1 can (20 ounces) crushed pineapple (drained)
  • 1 teaspoon green food coloring.
  • 1 tub (8 ounces) chilled whipped topping

Follow these simple instructions to make S St. Paddy's Day Leprechaun's Lucky Crunch Delight:

Preheat oven to 400 (F) degrees.

Place several pretzels in a zippered plastic bag. Seal it tightly with as little air trapped inside as possible. Use a baker's rolling pin to crush the pretzels into small pieces, but be careful not to pulverize them into powdered crumbs.)

In a large bowl, stir the crushed pretzels and melted butter together. Spread this mixture in an ungreased shallow metal baking pan. (A jelly-roll pan works well.)

Rinse and dry the bowl completely, as it will be needed again.

Bake the pretzel mixture for 5-6 minutes at 400 (F) degrees. Let it cool completely.

In the big bowl, combine the cream cheese and sugar. Use an electric blender to whip these together well. Spoon the pineapple and green food coloring into the mix, and stir it gently with a large wooden spoon or plastic spatula. Add the chilled whipped topping, and fold it in softly.

Chill the cream mix for at least an hour. (Ideally, this may be refrigerated overnight.)

Add the baked pretzel crunch mix immediately before serving.

NOTE: This recipe makes a delicious take-along treat for a party, potluck, or picnic on any occasion – if the green food color is omitted.
