  • Melt the butter on med at the bottom of a good soup pan/
  • Toss in the leeks as you are slicing them
  • stir for 2-3 minutes until the fragrance releases
  • Add 8 cups water or stock
  • Add potatoes as you dice them
  • Cook on low for 50 - 60 minutes

Gently add 1tsp salt & ½ stp pepper - adjust to your tastes

Serve with a good sandwich and look at you!
