Squash fritters are a perfect side dish to a quick or fancy meal! They are also perfect for Holidays or with a simple weeknight dish.
- 2 cups cooked squashed, mashed
- 2 eggs
- 1/2 small onion, chopped
- 6 tbsp flour
- 1 tsp sugar
- 1 tsp salt
- Pepper, to taste
- 1 tbsp garlic powder and onion powder
Preheat a non-stick pan over medium heat.
Add olive oil to pan.
Mix all ingredients together in a large bowl.
Pat into small cakes and fry.
