Sprio resurfaces as a Saratoga Springs sous chef

After being owner-chef of three different Albany restaurants, briefly operating a ready-to-eat food store in Latham and having his own TV cooking show, Carmine Sprio is trying something different -- and certainly much lower profile.

He has signed on as a sous chef at The Crown Grill in Saratoga Springs.

Sprio, whose latest Carmine's restaurant abruptly closed in February after state tax officials lowered the boom on him, is working under executive chef Kyle Hendrickson.

Owner Christel MacLean is quoted on the Times Union's Table Hopping blog as explaining the development this way: “We have experienced phenomenal growth in our first year and reached out for additional senior-level culinary talent. We were thrilled to attract someone of Carmine’s caliber and welcome him with open arms.”
