Spring recipes: Grilled shrimp and mango salsa

Break our your grill as the weather warms up and make this delicious, light meal.

Shrimp Ingredients
5 tbsp. olive oil
5 gloves garlic, sliced
2 tbsp. lime juice
½ tsp. pepper
1 tsp. salt
2 lbs. shrimp, shelled
6 skewers (presoaked)

Salsa Ingredients
1 bunch green onions, diced
2 mangoes, diced
1-2 jalapenos, diced
½ bunch cilantro leaves, chopped
Salt and pepper to taste

Begin with your shrimp. Heat the olive oil over medium heat in a saucepan. Cook the garlic until it becomes tender, then add in half of the lime juice and salt and pepper. Add the shrimp to the skewers, leaving at least ½ inch on each end. Coat the shrimp kabobs in the garlic sauce you just made. Cover in plastic wrap and chill for at least 2 hours. While your shrimp is chilling, make your salsa by tossing together the ingredients. Add this to your fridge as well while you grill your shrimp. Once your shrimp has chilled for 2-6 hours, remove and grill for 3 minutes on each side, or until pink and firm. Remove your salsa from the fridge and serve.
