Salads are great in the summer; but the body craves a good salad in the winter months as well. Spinach salads are light, refreshing and crisp. Spinach is available year round and adding a seasonal fruit, even a canned variety, makes spinach a great winter salad.
All three salads are different, tasty and healthy. Atlanta’s farmers markets carry fresh spinach as well as Whole Foods and all Fresh Market stores.
Salad #1
- 6 C fresh spinach
- Grilled or pan fried chicken breasts
- 1 C parsley chopped
- 2 green onions chopped
- 10 ozs. Mandarin oranges drained
- 1 C strawberry sliced
- ¼ C sliced almonds
Dressing
- ¼ C raspberry vinegar
- ½ C salad oil
- 2t sugar
- 1 t salt
- ½ t pepper
Salad #2
- 6 C fresh spinach
- 1 C Italian mushrooms sliced
- 4 strips Bacon pieces crispy and crumbled
- 2 boiled eggs quartered
- 1 C bean sprouts fresh
- ½ small can Mandarin oranges
Dressing
- 1 C vegetable oil
- 5 T red wine vinegar
- 4 T sour cream
- 1 ½ t salt
- ½ t dry mustard
- 2 T sugar
- 2 t parsley
- 2 cloves crushed garlic
Salad #3
- 6 C fresh spinach
- 3 large fresh red or yellow beets
- 3 peeled carrots jullienned
- 3 boiled eggs chopped
- 1 C chopped pecan halves
Dressing
- 1/3 C reduced-fat mayonnaise
- 1/3 C 2% milk
- 3 C nonfat plain yogurt
- 2 T tarragon vinegar or white vinegar
- 1 T Dijon mustard, mustard
- ½ t salt
- ¼ C crumbled blue cheese, (1 ounce)
