
This pie is great for brunch. It is great for the weekends as well as Holiday functions.
Spinach Pie
- 1 pie crust (frozen, refrigerated or homemade)
- 6 eggs
- 1 can spinach, drained well
- 1 cup shredded mozzarella cheese
- ½ cup Parmesan cheese, shredded
- Salt, pepper and garlic powder, about ½ tsp each
Preheat oven to 350*.
If using a refrigerated or homemade crust, roll it out into a pie pan.
Fold over the edges to make it look pretty.
In a bowl, beat eggs then add spinach, cheeses and spices. Mix together well.
Pour mixture into pie crust.
Bake for 25 to 30 minutes, until eggs in the center is cooked and is no longer shiny.
