Spinach Lasagna with Italian Sausage

Feed your family and friends this fantastic spinach lasagna with Italian sausage for an easy yet delicious holiday meal. This dish is so simple that it can also be made for a weeknight or weekend meal anytime.

What You Need:

Lasagna noodles, Cooked, enough to make 3 layers in 13x9 inch baking dish.
1 package of Italian sausage
1 large onion, chopped
4 cloves of garlic, minced
1/4 cup of olive oil
2 cans (15 ounces each) of whole tomatoes
1 can (15 ounces) of Italian diced tomatoes
2 can (8 ounces) of tomato sauce
2 cans (4 ounces each) of tomato paste
1 teaspoon of dried oregano
1 teaspoon of dried basil
Salt to taste
Ground black pepper to taste
1 bay leaf
For the Cheese Filling:
1 container (16 ounces) of ricotta cheese
1 egg
1 package (10-ounces) of frozen spinach, cooked and drained well
1/4 teaspoon of pepper
1/2 teaspoon of dried basil
1/4 cup of Parmesan cheese
For the Topping:
3 cups of mozzarella cheese, shredded
1/4 cup of Parmesan cheese, grated

What to Do:
STEP 1)
In a large saucepan on the stove set to medium heat setting, add olive oil, onions, and garlic and let simmer until onions are clear.

STEP 2) Meanwhile, cook the Italian sausage in a large skillet; cut into bite size pieces and cook sausage over medium heat until meat is no longer pink; drain. Once onions are cooked, add tomatoes, tomato paste and sauce, oregano, basil, salt, pepper, bay leaf and cooked Italian sausage. Stir until mixed. Bring to a boil. Reduce heat; cover and simmer for 2 hours, stirring occasionally.

STEP 3) Prepare the filling: by adding ricotta cheese, cooked drained spinach, egg, basil, pepper, and Parmesan cheese in a large bowl and mix well.

STEP 4) Prepare the lasagna: by adding 1/4 to 1/2 cup of sauce in bottom of 13 X 9 inch rectangular baking pan. Cover with a layer of noodles; (you may have to cut some to fit). Cover the noodles with 1/2 of the filling mixture and top with 1 cup of mozzarella cheese.Add 1 cup of sauce over the mozzarella cheese. Repeat one more time. Add another layer of noodles and top with 1/4 cup extra Parmesan cheese and the remaining mozzarella cheese.

STEP 5) Bake at 350 degrees covered with foil for 40 minutes. Uncover and bake an additional 10 to 15 minutes or until cheese is lightly brown.
