Spinach Cheese Potatoes

Baked potatoes have many companions, I thought as I searched for a meal addition that would be both healthy and delicious to my entire family. So I wondered why not this delicious vegetable that is enjoyed by many Americans. And viola!


4 large baked potatoes
1 package of spinach
2 garlic cloves, thinly chopped
4 tbsp. of butter
1 cup of chicken broth
3 cups of mozzarella cheese
1 cup of cheddar cheese
Salt and pepper to taste


Bake the potatoes in advance until tender. This will take from 30 minutes to an hour. In a medium size sauce pan, add the spinach, chicken broth, garlic cloves, butter, and cheeses. Steam the spinach until tender (5 to 7 minutes). Stir constantly. Allow the potatoes to cool for 5 minutes. Split open the potatoes and add the spinach mixture. Season the potatoes with salt and pepper to taste.
