An incredibly delicious and nutritious way to start your day.
Spinach and Cheeze Scramble
1 tbsp extra virgin olive oil
1 medium shallot; diced
2 garlic cloves; minced
¼ mushrooms; diced, with stems removed
1 pound firm or extra-firm tofu; drained and lightly pressed (tip: leave a little more water than you usually would, as the extra water helps the tofu absorb the flavours of the herbs and spices)
½ tsp turmeric
1 tsp paprika
1 tsp thyme
1 tsp ground cumin
½ tsp red pepper flakes
2 c baby spinach
1/3 c nutritional yeast
Heat the oil over medium heat; add the shallots and sauté for 1 minute.
Add the garlic and mushrooms and sauté for an additional minute.
Crumble the tofu into the skillet.
Add the turmeric, paprika, thyme, cumin, red pepper flakes and salt to coat the tofu.
Cook for 5-10 minutes.
Add spinach and cook until leaves have wilted; about 2-3 minutes.
Add the nutritional yeast. Mix thoroughly and serve.
