This is the time to eat peas in Colorado. They are so good you can eat them raw. This recipe adds a kick of flavor to the already flavorful peas. You can use shelled English peas, snap, sugar or any variety growing in your garden.
Spicy organic sugar peas recipe
- 2cups organic sugar peas
- 1 garlic clove or 1 TBSP chopped garlic scapes
- red pepper flakes, salt & pepper to taste
- olive oil
Heat oil in sauté pan, add garlic and cook until fragrant stirring constantly about 2 minutes. Add peas, red pepper flakes, salt & pepper to taste and cook until peas turn a bright green color. They will be warmed through but still crisp. Do not overcook. Serve immediately.
