Carrots are easy to grow, are delicious and nutritious. They are perfect for the frugal gardener since they can be used in so many ways. Raw, cooked, roasted and made into desserts are just some of the ways carrots are so versatile. Here is yet another way, made into spicy carrots and preserved using the boiling water bath method.
Ingredients for spicy carrots
4 - 6 garlic cloves, peeled and sliced
1-2 jalapeño peppers, sliced
2 pounds fresh carrots
4 cups distilled white vinegar
1 cup sugar
3 tablespoons salt
Divide the garlic, peppers among 3 pint canning jars that have been sterilized.
Trim, peel and cut carrots so they will fit into the pint jars.
Pack into jars vertically, being sure that there is about 1/2 inch headroom at the top of the jars.
Bring vinegar to a boil, add sugar and salt.
Stir to dissolve.
Pour the liquid over the carrots, covering them.
Wipe rims clean, then put canning lid and rings on jars.
Using the boiling water canning method, process the carrots for 15 minutes.
Turn off heat, allow jars to remain in canner for 5 minutes.
Remove from canner, set aside for 24 hours. Check seals, then store in cupboard.
