Last night’s episode of “Spice of Life with Bal Arneson,” was titled “Camping.” Bal Arneson is a chef, cookbook author, teacher and a mother, who knows how well spice adds to her cooking, but she also makes sure to add some spice to her life as well, as this episode proves.
As the episode begins, Bal is making breakfast for Anoop and Aaron, who are still asleep. She loves the quiet of the morning, where he can reflect on life. As she gathers ingredients for the granola, she is making, she adds just a bit of honey and molasses for a touch of sweetness. Unlike the store bought granola, that is often loaded with sugar, this will be nutritious as well as delicious. After it comes out of the oven, she adds dried fruit to the treat and serves it with yogurt and fresh fruit. After they finish breakfast, Bal had a surprise and announces that they are going camping.
After a three-hour drive, they arrived at Squamish Valley Campground, a beautiful area of British Columbia. They donned their bathing suits, and the girls took a dip in the icy lake, but not for long. Then they took a hike, and for lunch, Bal made veggie chili over the campfire. Anoop asked her mother about her experience growing up in India, and she told her how she learned to cook over a pit with a clay pot. Aaron and Anoop did a great job gathering firewood. Bal had sweet potatoes, yams, bell peppers, carrots and onions she skewered and grilled them. Then she started making the chili and added a perfect harmony of spices to the pot. Once they got warm, the aroma was making Anoop very hungry. As Bal added canned and fresh tomatoes, beans, and then the grilled corn and skewered vegetables, sour cream and shredded cheddar cheese. They had a crusty bread for dipping, and it was a great family meal.
As Aaron was looking up at the mountains, he wanted to go on the mountains, so Bal and her kids took a gondola ride where they could see the mountains up close. Bal had another surprise; they were going zip-lining. Aaron started to get scared, so Bal and him went side by side, but on the way back, Aaron was so light, that he got stuck and had to be brought in by the guide. He got over his fear and while he waited to be rescued, he was perfectly calm. Anoop went next and loved the exhilarating experience and told her brother how proud she was of him.
When they returned to the campsite, Bal had a chicken she roasted over the fire on a spit. It was rubbed with spices and just delicious. She also roasted potatoes and more vegetables for a delightful dinner. Find Bal’s recipes from this episode here.
As the day was drawing to a close, mother and her children nestled in their tent for a well-deserved night sleep on this episode of “Spice of Life with Bal Arneson.”
