Linda's Southern Potato Salad
- 5 pounds of potatoes not baking potatoes), peeled and cut into cubes
- 5 eggs
- 1 jar (8 ounce) salad cubes
- 1 cup DUKES mayonnaise, you can add more or less if you would like to
- Salt and Pepper, to taste
Add water and salt to a large pot and boil potatoes for 10-15 minutes, just until they are cooked but not too soft.
In a separate pot, boil eggs for 7-10 minutes.
Drain potatoes and add them to a large bowl.
Peel and slice eggs. Add them into bowl with potatoes.
Add salad cubes, mayo, salt and pepper in with potatoes and eggs.
Refrigerate 3-4 hours or overnight.

Sounds great but what is a salad cube?
I knew I would get that question :) It is like a relish...it can be found near the pickles at the grocery store :)
Make sure to get sweet salad cubes/relish. Dill is good too, but real southern potato salad is made with the sweet.
