If you've been keeping up with the weather reports, we're about to get a serious blast of winter! You may have already been hearing about record temperatures in the northern part of the country, so please take care to stay warm and eat well. The one food we often enjoy in the winter is soup and with a sandwich and a salad, you have a very good meal.

Doesn't a pot of "Hamburger Vegetable Soup" sound like a winner for these cold winter days? Let's make some! This recipe is a bit unusual, in that it calls for you to cook some potatoes and add salt, pepper and butter to them for flavor. You do this first and set aside. Then. you brown some ground beef along with some chopped onion. In a large soup pot (and I do mean large!), you place the potatoes, the browned beef, mixed vegetables, along with a can of tomato soup, whole tomatoes, tomato paste and ketchup. It all cooks for about 30 minutes, though you do need to stir it from time to time to keep it from sticking. You can now say "Soup's on!"

As you can see by the recipe, it contains ingredients you may already have on hand, which makes it an economical recipe, too. Since it makes a large amount, if there's any leftover, it will freeze great. This is also good to have if you're serving a large crowd. It would also be good to share with any one who's been ill with a cold or the flu, as this would be a fabulous treat for them.

When you come in out of the cold, settle in with a pot of this soup and get warm!


  • 2 to 3 large potatoes, diced and cooked, with salt, pepper and butter added to taste
  • 1 large pkg. frozen mixed vegetables or 2 cans mixed vegetables, drained
  • 1 can tomato soup
  • 1 can (1 pound) whole tomatoes
  • 1 can (15 oz.) tomato sauce
  • 1 can (6 oz.) tomato paste
  • 1/4 cup ketchup
  • 1 to 1-1/2 pounds ground beef
  • 1 large onion
  • salt and pepper to taste
  • 1/2 teaspoon celery seeds

Prepare potatoes and set aside. In a large pot, place the mixed vegetables, tomato soup, whole tomatoes, tomato sauce, tomato paste and ketchup. Brown the ground beef with the onion and drain. Add to the pot, along with the potatoes, salt and pepper and celery seeds. Bring to boiling, cover, reduce heat and simmer for 30 minutes, stirring occasionally to prevent sticking. Yield: 12+ servings.
